Pasta

2 c. Kamut/Khorasan flour
3 eggs
2 t. oil
2 T. water

Combine in mixer or by hand. Add enough water to form a ball. Knead gently 5-8 minutes until smooth and elastic. Cover and let stand at least 10 minutes. Roll and cut by machine or hand.

VARIATIONS:
Vegetable: Add any cooked puréed veggies. For green use spinach, broccoli, or peas. For orange, use carrots or tomatoes. For red, use beets. Prepare dough as above, but use one less egg.

Herb: Mix fresh or dried herbs into flour before adding remaining ingredients.
