Whole Wheat Saltines

4 c. flour (kamut, spelt, red fife – any flour will work)
1 t. baking powder
¾ c. of butter
1 1/3 c. milk 
Salt to sprinkle

Preheat oven to 375º F. Combine first three ingredients in food processor or by hand, which I usually do. Grate the frozen butter into the flour. Add milk and mix briefly.

Divide into 4 pieces and roll each very thin, about 1/8 inch, on a floured surface. Make any shape you want, prick each cracker several times with a fork and sprinkle salt. Bake until lightly brown, 8-9 minutes... I usually do 12 minutes as I like them crisp and the whole wheat takes longer. Sometimes I add a ¼ c. of cocoa nibs when we are just eating them plain with our coffee. Yield: 40-50 crackers.
