Irish Soda Bread

2¾ c. flour
¼ c. wheat germ
3 T. sugar (less if you prefer)
1 t. baking powder
1 t. baking soda
½ t. salt
3 T. cold butter (can substitute 1½ T. veg oil)
½ c. currants, dried
1¼ c. buttermilk
1 t. milk

Mix together dry ingredients. Cut in butter. Add currants. Add buttermilk and stir til just combined. Knead. Form flattened ball 2" high. Place on greased baking sheet. With pastry brush lightly brush loaf with milk, over top and sides of dough. Cut a + shape ¼ inch deep (not to the edges!). Bake at 375ºF til golden and toothpick comes out clean from the centre when tested (approximately 40 minutes). Cool slightly. Serve warm with butter, cheese or your favorite jam!
