Organic Sourdough Waffles and Pancakes

  • 2 cups sourdough starter
  • 4 Tbls. melted butter, lard, or coconut oil
  • 2 Tbls. sweetener (rapadura, honey, maple syrup, or a pinch of stevia powder)
  • 2 eggs (separated)
  • 2 Tbls. arrowroot powder
  • ½ tsp. celtic sea salt
  • ½ tsp. baking soda

Preheat waffle iron. (Try to find an old cast iron one.) Beat egg whites in a separate bowl until stiff. Mix together the rest of the ingredients in a large bowl. Gently fold in the eggs whites. If the batter seems a bit thick then add a little water. Pour batter into hot waffle iron and cook for about 3-4 min. until golden brown.

Serve with butter, honey, maple syrup, yogurt, pre-soaked and dried nuts, fresh fruit or what ever you like. My all-time favorite is cinnamon fried apples, walnuts, raw butter, and maple syrup.

For pancakes just skip the beating of the egg whites and add the whole egg into the batter. Cook in a cast iron frying pan.
